🌮 Raw Vegan Lettuce Boats with Siete Seasoning + Cashew Cheese




Ingredients (serves 2–3)

 

  • 1 head romaine or butter lettuce (large leaves for “boats”)
  • 1 cup walnuts (soaked 2–4 hrs, then drained)
  • 1 tbsp olive oil or hemp oil
  • 1 tbsp coconut aminos (or soy-free tamari)
  • 1 tbsp Siete Taco Seasoning (mild or spicy—your choice)
  • 1 lime, juiced
  • 1 tomato, diced
  • 1 small cucumber, diced
  • 1 avocado, sliced
  • Fresh cilantro for topping

Cashew Cheese Sauce 🧀✨

 

  • 1 cup raw cashews (soaked 2 hrs, drained)
  • 2 tbsp nutritional yeast
  • 1 garlic clove (or ½ tsp garlic powder)
  • Juice of 1 lemon
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ cup water (add more for desired creaminess)
  • Sea salt to taste

Blend until silky smooth  

Instructions

 

  1. Make the walnut “meat”: Pulse soaked walnuts, olive oil, coconut aminos, lime juice, and Siete seasoning in a food processor until crumbly.
  2. Prep your lettuce boats: Lay out lettuce leaves. Add a scoop of walnut meat.
  3. Top it off: Add diced tomato, cucumber, avocado slices.
  4. Drizzle that cheese: Spoon cashew cheese over the top until it’s giving “nacho vibes.”
  5. Finish: Garnish with cilantro + an extra squeeze of lime.
